Detail view doesn't accept custom template if form's "Record to database" setting is set to No.

Was a bit frustrating. I thought I was crazy.

Not sure what you mean.
It does accept it in the form settings. But there's no details view in this case, no data stored = no record anywhere = no data to show (nor in a list nor as details).
PDF template for emails with PDF attachment is working.

Also note that although the UI allows you to, you can't (or rather, musn't) turn "Record to database" off once a form (or copy of) is created. That just winds up breaking things. The record data setting is only relevant when creating a new form.
