I didn't get yours working, it's unsetting correctly
(after unset($formModel->_formData[$dropdown]);
$formModel->_formData[$dropdown] is NULL)

but I didn't get it to store it in the database.

I thought it was easy to make the script work with more than one drop down element, but I can't make it work. It still saves data with just "Select" selected.
