Editing Elements by User

I've created a list which has a dates, descriptions and two fields where people can sign up for volunteering at that event. I have it set up where registered users can edit the record, but I would like to restrict them to editing ONLY the two fields for volunteering. I don't want them to edit the date or description of the event. I do have it set up so only the administrator can add and delete whole records. Is there a way to restrict editing of a specific element, other than setting the element to "read only" once the whole list is developed?

You have an "access" setting in each element for viewing/editing rights.

I figured there was a way, but the label "Form view" threw me because it was unclear to me that it was for the editing permission. I did not read the description in the hover popup, which I should have. Perhaps it might be good to make a reference to the editing permission level in the label. Just a thought for the developers.
