Characters Modified on submit

I have a few forms that keep turning my ampersand (&) into &
I also and seeing that my single quote (') is being stored as '
I presume that this is for security reasons. Is there a way for me to allow some characters to process as is?

Did some testing. It looks like this happens with calc, and I imagine eval... But I also see it with the textarea.

Correction: It didn't happen with textare, but it did happen when I threw the contents of textarea through a loop.

I feel like there is some promise here https://www.php.net/manual/en/function.htmlspecialchars.php but nothing is doing the trick. right now testing on my loop. the submitted row is fine but the single quotes on the loop are modified.

This is ultimately what helped. https://www.php.net/manual/en/function.html-entity-decode.php

html_entity_decode($string, ENT_QUOTES | ENT_XML1, 'UTF-8')

Apparently this poses a security risk, So I'll leave this open in case any of yall have something better.

So to be clear, this only happens when you do you own processing on submitted data?
