If "alter existing fields" = no Fabrik shouldn't try to change the table collation.
I'm connecting to an external server to an exising table (readonly access) and can't resave my list because Fabrik always is trying to change the collation; it is not UTF8 but this should not matter (selecting the correct latin1... collation solves the problem, but Fabrik should not touch such a table).
