We have resolved the issue with the J! updater and this will be fixed in the next release.
What about all of the plugins we don't want? We have to go through them one by one?You need to download to your PC, unpack and then upload only the following root folders:

prophoto: Fabrik is an open source product rather than a commercial product, and as troester says, free support is provided by the community - both troester and myself are just users like you, and we help others as a contribution to recognise the benefit we get from this free software.
If you have an accelerated time-line and you need more prompt support, perhaps from the primary developers of Fabrik, then please consider buying a Professional Subscription as an alternative way of giving something back to the developers.

Sounds like a good deal, until I see the glaringly obvious issues that make me wonder if it will be a waste of money...Rob and Hugh prioritise their time heavily towards the Pro forums, plus they use live chat. So if you have an accelerated timeline, then paying what is a very modest amount as a Pro subscription gets you priority time from the two people who know most about the software.
That is why they have little time for helping answer question in this Community forum, which as the name suggests is for the community to help one another.
Perhaps your needs would be better suited by a commercial product which costs (say) EUR50000 to buy and (say) EUR2000 per month for maintenance and (say) EUR200 per hour for consultancy.
And in my experience (as a professional IT manager who has purchased such products and support on numerous occasions), you would still get better support here than you would from these commercial organisations.
