separate date and time fileds?

Sure.
You could (ab)use the birthday element for date, and additionally try the time element.
For the latter, and if it'd suit your use case better, alternatively you could also make it a dropdown (e.g. for full hours) and, if needed, a second dropdown for minutes.
Or tinker with two "regular" date elements and their input/output formats.
It really depends on what very exactly you need.
